When I go into building statistics, I can't see and manage individual colonists on that building, I can only set the priorities. When I played on mobile a time ago it was possible. Was this option removed? It was really useful sometimes.

Once the game got so big and people started having colonies with million+ citizens, changes had to be made to the engine to accommodate such large cities. Colonists are no longer processed on an individual basis as a result.
