Are there any structures directly next to your Grammaticuses (including each other)? I had the same problem and then moved a Grammaticus to the middle of an open field. After waiting for a while, the worker finally came back. Meanwhile, the other Grammaticuses that were still adjacent to other buildings did not recover.
